Guanciale in a carbonara should be crispy, not soggy. You can 't serve it poached The young fella that was serving, did not have much experience or training. At this level of pricing, the waiter should understand when you can interrupt and when its the time to take away the plates from the table. Not while I was still eating. In the end the atmosphere its quite unique. But the price of the overall experience its not justified since the level of service doesn 't match the expectations.

A must dining experience in the hills of Umbria! Estate of Castello di Reschio is enchanting and unique. The Scuderia restaurant, fireside bar and outdoor seating area is testament to the design team’s expertise in creating a refined-sublime experience. The staff were both welcoming and responsive to our group’s requests. And our lunch was served promptly, beautifully presented and delicious too. After a two hour lunch that included a visit to an art exhibition adjoining the Scuderia, ample photo ops were provided on the terrace, outdoor garden and panoramic vistas. We shall definitely return!
